Rebel is a sparkling wine, produced in a 30-year-old-vines vineyard planted at 900+ feet above sea level, which is rooted in sandy soils rich in fossils. Rebel is a fruit-driven Pét Nat, showing flavors of pear, citrus zest, and a touch of green apple with scents of broom flowers and a yeasty finish. It has soft carbonation and fine, tight bubbles.

Grapes: 100% Vernaccia.
Fermentation: the grapes are whole bunch pressed and partially fermented before bottling. As all Pét Nats, it was not disgorged showing it’s unfiltered character and no sulfur was added.
Maturation: on it’s natural yeasts until you decide to open it.
Bâttonage: every week from October until February.
