Rebel is a sparkling wine, produced in a 30-year-old-vines vineyard planted at 900+ feet above sea level, which is rooted in sandy soils rich in fossils. Grapes: 100% Vernaccia.
Fermentation: the grapes are whole bunch pressed and partially fermented before bottling. As all Pét Nats, it was not disgorged showing it’s unfiltered character and no sulfur was added.
